Hi,

I want to make a proper looking structure of a cheese, bread and alike.
I have a general idea and results. All I need now is to make noise making structure away from the surface.
I need to sample a sdf to have a fall of from surface.

notice how holes are contained within.

I slapped together a quick attempt at this. It'll take a bit of tweaking to get what you actually want, but this shows how to do something like this with the new Boolean SOP. You'll probably want to vary the shape of the holes a bit, using a For Loop block over the points, instead of just using Copy To Points, and you'll probably want to tweak the hole sizes and distribution.

Here's what I've got.

What I meant was to offset holes from the surface, which should be untouched like in the picture.

In VolumeVOP there is a bounding box (BB) value you can use as a gradient ranging from top to bottom.
