This was a regression in the initial release build which should have since been fixed. I did a quick try in my 20.0.590 build and it seems to be working there.

In H20.5.332, this doesn't work. Unable to show onion skinning. Checked in Settings, everywhere. But nothing works... Any ideas ?

IT WORKED !!! My viewport was set to "Vulkan". Don't remind to have set it this way... OK so, Onion Skin needs OPENGL viewport option to work ! THANK YOU !
