I saw in a tutorial that you can put op/ before a node path.
Where can I find in the help system something about this operator ?
“op” is too generic to be foudn with the search engine, and I didn't find any reference in the HScript and expressions sections.

No idea where you can find something to read about it, but in general op stands for the same purpose as http/ or ftp/ in your web browser. It's a name of protocol telling Houdini that a target file is served by its operator, instead of being on disk. Actually at least http protocol is also supported in Houdini, so you can load your geometry directly from www server for any reason .
