Trace SOP.
This SOP doesn't have a tool at the object level (submitted RFE for this) so you have to first create a default object in your scene, dive in and then tab-type Trace to add the SOP.
The Trace SOP will take the image on disk or from the built-in compositor and generate outline contour curves based on your chosen parameters.
Quite a few options.
See attached file for a quick COP based workflow. Feel free to add any number of compositing operations to the image network in /img/comp1 to directly affect the result of the Trace SOP.
