Do I need to be concerned about which version I install? I don't code at all (yet).... I notice the default H19 install is python3 rather than 2.

I'd say go for hou py3 builds without much concerns.
Factory nodes should be all py3 compatible already, I believe.
If you use any custom HDA or package you should just check with the vendor that they are py3 ready too.
Note also that many HDAs built under py2 environment don't have any problem in houdini py3 builds.
