What is the difference between the production build and the daily build ?
Is the production build more stable ?

Yes, the production builds are the stable ones.
You would choose the daily build if you
- like to live dangerously
- smoke at gas stations
- like your meat raw and your spirits flammable
- you need bugfixes and enhancements, that have been checked in since the last production build.
The last one is a main feature of houdini. Often you submit a bug and 2 days later it's fixed.
And if you run into an issue the first thing to do is check the Journal to see if a fix for your problem appeared recently and then test the daily build to see if it's gone.

All builds on the build download page are colored as well, indicating if any regression tests failed for that build. Yellow indicates that some tests didn't pass, and that in itself doesn't mean the build is unusable, just that the results are not 100% the same. Often this happens with rendered images or precision issues with geometry. Red builds you should not download unless you really, really have to, as some tests have crashed or many, many tests failed. If the background of the build is white, no failures were detected.
Production builds are always chosen from builds with zero failures and are tested. Dailies don't receive the same testing. There is a policy that the released build should be stable at all times so dailies are much more stable than the development version - they should not be considered beta builds
