How do you apply UV's to a vellum sim in DOPS?

Hello,

I have two vellum sims that I combined in DOPS and I am planning to export it to blender as an alembic.
I tried to texture it in blender but without UV's the texture mostly floats on the surface of my geometry.

How would I approach this?

Create uvs on your geo before you plug it to vellum constraints or even copy to points, no need to do it in DOPs

I am trying to use two different forces on each vellum sim. Is that possible outside of DOPs?

Yes, UVs are just a static attribute on the vertices of the geo
Vellum simulation doesn't affect it at all
