MPlay Quicktime export encoding error / Houdini 19.5.640 Edu

Hello everyone,
I'm experiencing troubles with Mplay encoding of Flipbooks, as the process I've been using for years seems to be 'broken'.
I'm now using Houdini Education 19.5.640 build.
I first thought it was a machine-related problem ('old' Asus laptop), but today at school the problem was the same on every student's workstation (2022 HP_Z2).

Here's what I do :
- Launch a flipbook render, 120 frames, go nicely to MPlay ;
- Use the File menu to export a Quicktime Movie ;
- Set the path and file name, .mp4 extension (did the same with .mov and .MOV, same issue) ;
- Click 'Save' button, images are exported ;

- On export completion, an error message is raised, stating that "An error occured while encoding.".

I tried to uninstall and reinstall Quicktime (old stuff...), same issue.
I can't even get to the encoding options windows.
Didi anyone encountered this issue ? Any idea about what can I do to circumvent it ?
(exporting still frames and encoding them to video with another software is not an option, as I need my beginners students to easily export flipbooks for evaluations marks).

I tried a few more things, and discovered the problem is related to the .env file, more specifically with Renderman.
Here's the "vanilla" MPlay export menu (left) and the MPlay export menu when Renderman is 'set' in the .env file (right) :

My .env file contains this :

RMANTREE="C:\Program Files\Pixar\RenderManProServer-25.2"
RFHTREE="C:\Program Files\Pixar\RenderManForHoudini-25.2"
RMAN_PROCEDURALPATH=$RFHTREE\3.9\19.5.640\openvdb;&
HOUDINI_PATH=$RFHTREE\3.9\19.5.640;$HOUDINI_PATH;&
PATH= $RMANTREE\bin;& h

I'll read the docs to see how can I add the ffmpeg bin path to this, without breaking everything
