How to change parameter value using value ladder using laptop's trackpad (without mouse)? Does it only work using middle mouse ?

Yes, the value ladder.

Whoever came up with that idea should be punished ;-)

Or at least give us a useable slider besides the value ladder, that automatically adjusts the range when typing a larger or smaller value then the default.

Or adjust the number next to text input cursor with mouse wheel.
