if it's about cutting only polys that are facing the camera then you can:
enter selection mode
make sure Area Select Visible Geometry Only is on
rect select your geo, note that occluded points will not be selected
enter Knife Tool, make a slice, press Q to repeat slicing until you are happy
all your cuts will be done only on selected polys
